History and curiosities: The Brut is a wine of depth, characterized by fine and elegant citrus notes, citron and lemon zest, white peach, and hawthorn. It is characterized by a lovely acidity and freshness that stimulate mouthwatering sensations, swallowing, and thus intestinal peristalsis, preparing us for the perfect start to the meal. The perlage, due to the direct secondary fermentation (our patent), is absolutely fine, persistent, and intense. The direct fermentation method, unlike the traditional and Martinotti methods, allows us to preserve all the primary aromas of the grapes, as well as the secondary aromas of fermentation.
It contains no added sulfites and no complex chemicals, which are responsible for the typical “after-day headache.”
